Coconut Curry Ramen with Wagyu Beef Recipe

My first recipe on the blog! Ahhh cooking is one of my passions so I am excited to share this recipe. I grew up in the kitchen with my mom where we shared food and she taught me her best tips. My American mother learned how to cook Jordanian food at an early age where she filled our home with traditional recipes passed on to me and my six siblings. I created this winter inspired recipe with my husband on a cold November night in our Raleigh home. I hope you enjoy it as much as we do!

INGREDIENTS:

  • 1/2 white onion

  • 2 cloves minced garlic

  • 1/4 cup matchstix carrots

  • 1/4 cup fresh mushroom halves

  • 1- 13.5 ounce can full coconut milk

  • 4 tablespoons curry paste

  • 6 cups of vegetable broth

  • Wagyu beef- or thinly sliced meat of your choice

  • Fresh ramen noodles

  • 1 teaspoon ginger

  • 1/2 teaspoon curry

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Toppings:

  • Red cabbage

  • Boiled eggs

  • Bean sprouts

  • Cilantro

  • Green onions

  • Carrots

  • Limes

    -To start, prep your vegetable. I love to have everything cut up and sectioned off before starting the main portion of the recipe. The crunch in the vegetable toppings are half of the experience- but also completely optional depending on your taste!

1/2 white onion thinly sliced

2 cloves minced garlic

1/4 cup matchstix carrots

1/4 cup fresh mushroom halves

-Sauté the vegetables in one tablespoon of olive oil until softened (about 3-4 minutes). Once softened add 4 tablespoons (about 2.5 ounces) red curry paste.

-Let this cook together for about two minute with softened vegetables.

-Add in 1 full 13.5 ounce can of coconut milk and 6 cups vegetable or chicken broth on medium heat.

-Season with 1 teaspoon ginger, 1/2 teaspoon curry, 1 teaspoon garlic powder, 1 teaspoon paprika, salt and pepper to taste.

-Once at a light boil, add in fresh ramen noodles and cook according to package instructions (typically 3-4 minutes).

-Last step is to add in thinly sliced wagyu beef and only cook for about 3 mins- serve immediately with freshly squeezed lime and toppings listed below.

Green onions

Carrots

Limes
